Recipe of the Week!

Thai Peanut Noodles

Nutritional Information (serves 6):
Calories: 290
Fat: 9 grams
Carbohydrates: 44 grams
Protein: 11 grams

Ingredients:
8 oz. spaghetti or other long, thin pasta
1/2 cup peanuts
3 Tbsp. soy sauce
3 Tbsp. water
2 Tbsp. lemon juice
1 Tbsp. honey
1 Tbsp. vegetable oil
1/2 cup minced, peeled onion
1/2 cup minced, peeled onion
2 cloves garlic, peeled and finely chopped
3 cups bean sprouts
1 cup chopped snow peas
1/4 cup sliced green onions

Cook pasta according to package directions. Drain and set aside. 

Place peanuts in blender and blend until finely chopped. Set aside.

In a small bowl, combine soy sauce, water, lemon juice and honey. Set aside. 

Heat oil in a large nonstick skillet over medium heat. Add onion and garlic. Cook, stirring, 2 minutes, or until onions are slightly tender. Add bean sprouts, snow peas and half the soy sauce mixture. Cook 2 or 3 minutes, stirring until bean sprouts are just barely tender. 

Add remaining soy sauce mixture to skillet, along with green onions, peanuts and pasta. Toss well and serve.
