Towson University opens new Towson Center dining hall
Doc’s South Campus Kitchen features a nutrition-forward menu for students, student-athletes
Towson University is adding another all-you-care-to-eat dining hall to campus, continuing to find ways to serve students with different meal options that fit their busy schedules.
Doc’s South Campus Kitchen is inside the Towson Center, which is located on the south side of campus next to Unitas Stadium and SECU Arena.
It will provide access to nutrition-forward meal options to those who spend time on TU’s south campus, especially TU’s student-athletes and athletics staff while remaining open to the entire campus community.
“It’s important to create a dining destination right here in South Campus, where we can best meet the needs of our student-athletes and give other students more opportunities to visit this area and strengthen their connection to our athletic facilities,” said Towson University President Mark Ginsberg during the dining hall’s grand opening on Feb. 3.
The menu at Doc’s features many of the same core student-favorites found in TU’s other dining halls, including a hot entrée station, deli, salad bar, soups and beverage station but with a more intentional and streamlined approach. It’s designed to emphasize balance and quality, with no fried items, no pork and a strong focus on whole-muscle proteins.
The idea for Doc’s South Campus Kitchen came after student-athletes began spending more time in study and advising sessions around the athletic facilities on south campus. With the change in schedules, there was a need to provide a space where they could easily obtain fresh and healthy meals.
Towson University Athletics worked with Aramark, TU’s dining partner, along with Student Affairs, Facilities Management and other partners across campus to develop a unique space that provides nutrition-forward meals to not only student-athletes but the entire TU community.
“Having an exciting, new facility here that is conveniently located near the daily activities of our student-athletes is going to be a game changer,” says TU athletics director Steve Eigenbrot. “Doc’s is going to truly elevate our department, not just in how our Tigers fuel but also in giving them a place to take pride in where they can gather and develop esprit de corps.”

For the past two years, Aramark provided student-athletes with meals located in a cutout off a hallway near the locker rooms in the Towson Center, called the Fuel Zone.
But when the kinesiology department moved its classes to the new Health Professions Building, the university remodeled the old Towson Center classrooms into a fully operational kitchen and dining space.
“Doc’s South Campus Kitchen is a reflection of Towson University’s commitment to supporting students inside and outside the classroom,” says Rich Coburn, district manager for Tiger Hospitality. “By expanding dining options to the south side of campus, we’re creating a wider experience that’s accessible, inclusive and designed to help students feel their best every day.”
And while athletes were a focus, they weren’t the only ones in mind. The entire TU community will have access to Doc’s South Campus Kitchen. Whether students are heading to class, studying late or just looking for a balanced and satisfying meal, Doc’s is an experience for the entire campus.
“Doc’s South Campus Kitchen was designed with student-athletes in mind but built for the entire Towson community,” says Holly Delagrange, Tiger Hospitality’s registered dietitian. “The menu emphasizes high-quality proteins and carbohydrates that support energy, recovery and overall performance and a busy student life.”
